Baby-friendly Banana & Date Muffin

We always have bananas at home. ALWAYS. It's the perfect snack during the day especially before and post workout. Also, bananas with almond/peanut butter on top?? YUMMY. When we have too many ripe bananas though, i like to cut them up and freeze them for a smoothie later in the week.

Earlier this week i had one measly overripe banana and lots of dates leftover so i decided to whip up a banana-date muffin. A quick google search gave me recipes where i didn't have all the ingredients on hand at home, so i came up with something on my own. And guess what, it turned out awesome!


Ingredients:
  • 1 ripe banana
  • 10 dates, pitted
  • 2 eggs
  • 5 tbs plain flour
  • pinch of baking soda
  • pinch of cinnamon


I just hand mixed all the wet ingredients with a fork in a bowl. Then i added the dry ingredients and kind of eyeballed the flour until i got the consistency i wanted. I used regular muffin tins with cupcake liners, or you can grease the muffin pan with butter or oil spray.

This made 7 muffins using the regular muffin tin, it would probably make 12-15 mini muffins.

There was no refined sugar added, so this was also good for Lennox. It was pretty sweet because of the banana & dates and he loved it!

Breastfeeding & Ramadan? Part 1

Tomorrow marks the first day of Ramadan in 2016. Last year i did not fast as Lennox was born on the 5th day of Ramadan, my little ramadan baby! :) This year I plan to fast as usual. Only difference is that I'm breastfeeding. Lennox is almost 1 and nurses on average 4 times a day: in the morning, before nap #1 (about 1130am), before nap #2 (about 5pm) and before he goes to sleep at night (about 830pm). Throughout the night he still wakes up sometimes and the quickest way to get him back to sleep is to nurse him. The night needs are comfort feeds i think, i don't think he's having a full meal in the middle of the night. There are fears that my milk supply might run out when i fast. You are STILL breastfeeding?

This sentence really irks me! Lennox is almost 14 months old and yes I'm breastfeeding him. I didn't think i would breastfeed this long; i was breastfed till about 7 months and many of my nephews and nieces were also breastfed till around the same time (below 1 year). So I never imagined that i would go past 1 year. I am a proponent of breastfeeding, but also a proponent of feeding your baby, whatever way that might be (formula, or breastmilk). What i notice here in Europe is that people stop breastfeeding much, much earlier. I usually get these 'when are you going to stop' questions from people here. Back in Asia it's quite a norm to still be breastfeeding around age 1 and nobody really thinks of it as 'taboo' even if you go past 1. I've been wanting to start a blog for awhile now since Lennox was born in June 2015... He's almost 11 months old now and finally... here it is! I was hung up on the blog name, how to get readers/followers, how to monetize the blog, etc etc... then i realised, Hey, i'm doing this for ME! Who cares if anyone (or nobody) reads this?? Since i was young i've always kept (hand-written) journals...
